Stuffed Bell Peppers!

As promised, here is a YUMMY recipe for stuffed bell peppers! I had a some extra filling which was really tasty in tortillas, or mixed in with pasta, or added to queso cheese for dip as leftovers! :) 2 large bell peppers (or more if cooking for more than 2) 1 lb ground beef 3 green peppers (chopped) ::it helps to freeze them whole before you chop them...less messy! :) :: 1 can tomato (petite diced, drained) 3 stalks chopped celery 1 8oz can Mexicorn (drained) 2-3 cloves garlic (chopped or minced) ground chili pepper salt pepper shredded cheese (about 1.5 cups) Cut off the tops of the peppers that you're going to stuff, cover with water in a saucepan and bring to a boil. Cook the ground beef.  Meanwhile, mix the chopped green peppers, the drained canned tomato, chopped celery, drained mexicorn, chopped garlic, about a tbs of chili pepper, and a little salt and pepper to taste in a large bowl.  Once the beef is cooked, add it to the mixture.  Remove the peppe...

Homemade Flour Tortillas! :)

I had some leftovers from stuffed bell peppers the other night (which I will post a recipe for that as well…they were yummy! I combined two recipes to make my own).  I thought the leftovers would be really good in tortillas…but I didn’t have any…and didn’t want to go to the store because I’d be tempted to buy too many other things! :) So I found a recipe! :)  I used this one from allrecipes.com but used self-rising flour instead of all-purpose+salt+baking soda (I always do that in recipes).  I also cut it down to make 8 instead of 60, because I just wanted to try a few to see how they came out.  I actually got 5 small tortillas from it.  next time I’ll probably cut it down to “30” and see how many large tortillas I can get! :) They’re all a little oddly-shaped, except the last one! :) And, like I said, I paired it up with leftovers from the stuffed bell peppers….good choice! It was a delicious lunch! :)

From Bridesmaid Dress to Bridal Tea Dress!

My sister-in-law was a bridesmaid about two years ago for one of our friends and she wore this pretty, long, taffeta dress from Pricilla of Boston (in "blackberry" as they call it...which is like an iridescent purple/black) It was very pretty on her, but she didn't really have anywhere else to wear it! So....with all of her bridal showers, teas, etc coming up...she was wanting some new cute dresses.  I chopped this one off to around her knee, hemmed it, and added a hidden pocket! :) Oooo I'm so excited to see her wear it! :)

Buffalo Chicken Dip from Wifey in Training

I’ve been looking for a good reason to make this…every time I’ve put it on my menu, something comes up and we wind up eating out, eating leftover, or going to a dinner party…so….I decided since I have the ingredients, and I have graduation, I may as well make this delicious dip! :) I found the recipe over at Wifey in Training (who is a soon-to-be mom!) back in February…and it’s delicious! The ONLY thing I changed was I used two cans of chicken instead of fresh chicken because when I went shopping for groceries this month, I went to a different store and their chicken selection was poor, so I’m saving the chicken I have for meals. Here’s a link to her Buffalo Chicken Dip !  We’re going to eat ours with tortilla chips, crackers, celery, and carrots…yummm….while we wait for some crowds to clear out after graduation before going to eat dinner! :)

She’s got some weird kids doesn’t she? :) I’ve got to brag on Mom again today…I haven’t written about it on here because this happened while I was finishing up schoolwork, but Mom finished her first 5K the day before Easter in about 37 minutes…and got 3rd place in her age group! :) Yay Mom!! :) Here is my Mother’s Day post from last year ! :)

Wedding Shower Planning!

One week from today, we’ll be having a wedding shower at the beach for my sister-in-law! :)  I’ve been planning off an on while finishing schoolwork, but now that everything is done, I’m working on the details! :) Here is an inspiration board I made a while back for the theme of the shower.  This shower is a getaway for the bridesmaids who could get out of town and a lingerie shower in one. It’s going to be so much fun! :) I’ll be honest…I don’t remember where I got half of these pictures :/.  Some were probably stock photos even from somewhere!  If you happen to be the original owner of one of these pics, just let me know and I’ll give you credit! :)

Final Semester in Master's Program = Done!
