Stuffed Bell Peppers!

As promised, here is a YUMMY recipe for stuffed bell peppers! I had a some extra filling which was really tasty in tortillas, or mixed in with pasta, or added to queso cheese for dip as leftovers! :)

2 large bell peppers (or more if cooking for more than 2)
1 lb ground beef
3 green peppers (chopped) ::it helps to freeze them whole before you chop them...less messy! :) ::
1 can tomato (petite diced, drained)
3 stalks chopped celery
1 8oz can Mexicorn (drained)
2-3 cloves garlic (chopped or minced)
ground chili pepper
salt
pepper
shredded cheese (about 1.5 cups)

Cut off the tops of the peppers that you're going to stuff, cover with water in a saucepan and bring to a boil.
Cook the ground beef.  Meanwhile, mix the chopped green peppers, the drained canned tomato, chopped celery, drained mexicorn, chopped garlic, about a tbs of chili pepper, and a little salt and pepper to taste in a large bowl.  Once the beef is cooked, add it to the mixture.  Remove the peppers from the boiling water and fill with stuffing.  Place them in a 9x12 baking dish with a water in the bottom (about 1/2 inch or so).  Bake at 350* for 30-40 minutes.  Sprinkle with some cheese about halfway through cooking time and continue to cook until melted.  We made some brown rice (boil in a bag! yay!) to eat with our peppers....yum! :) Enjoy! :)
